Iced Pumpkin Cream Matcha
Uses Matcha Syrup — make a batch ahead of time; it keeps in the fridge for a week or two, so you won't need to make it again for every drink.
Ingredients & steps
StandardIngredients
- 2 tbsp Matcha Syrup (make a batch ahead of time -- it keeps about 1 week in the fridge)
- 6oz cold water
- Ice (enough to fill a 16oz glass)
- 1/3 cup heavy cream
- 2 tbsp real pumpkin puree (canned, plain -- not pumpkin pie filling)
- 1 tbsp brown sugar
- 1/4 tsp pumpkin pie spice, plus more for topping
- 1/4 tsp vanilla extract
Steps
- 1.Make the pumpkin cream cold foam first: combine the heavy cream, pumpkin puree, brown sugar, pumpkin pie spice, and vanilla extract in a jar or bowl. Whip with a milk frother, hand mixer, or immersion blender for 30-60 seconds until thickened and foamy but still pourable -- cold-foam texture, not stiff whipped-cream peaks. This can be made up to a day ahead and kept in the fridge.
- 2.Add 2 tbsp Matcha Syrup to a 16oz glass.
- 3.Fill the glass with ice, then pour 6oz cold water over the ice and stir well to combine with the syrup.
- 4.Pour the pumpkin cream cold foam over the back of a spoon on top so it floats on the surface instead of sinking in.
- 5.Finish with a pinch of pumpkin pie spice on top. Serve immediately with a straw, stirring the foam in as you drink.

This is a copycat of the iced-matcha-plus-pumpkin-cream-foam format that showed up on coffee chains’ fall 2026 menus — not affiliated with, or claiming to replicate exactly, any specific chain’s proprietary drink. It’s built the same way as our Iced Pumpkin Cream Shaken Espresso, with matcha swapped in for the espresso base.
Why This Isn’t a Pumpkin Spice Latte With Matcha Instead of Coffee
A pumpkin spice latte is syrup stirred into espresso with steamed milk poured over — a hot-built, dairy-forward drink. This is structurally different: matcha syrup and water over ice, with a separately whipped pumpkin cream cold foam floated on top rather than mixed through. The foam carries all the dairy and most of the richness; the base underneath is just matcha and water.
Make the Pumpkin Cream Cold Foam
Combine 1/3 cup heavy cream, 2 tbsp real pumpkin puree, 1 tbsp brown sugar, 1/4 tsp pumpkin pie spice, and 1/4 tsp vanilla extract. Whip with a milk frother, hand mixer, or immersion blender for 30-60 seconds until it thickens and turns foamy but is still pourable. This is the identical foam used in our Iced Pumpkin Cream Shaken Espresso — it can be made up to a day ahead and kept in the fridge.
Build the Iced Matcha
- Add 2 tbsp Matcha Syrup to a 16oz glass.
- Fill with ice, then pour 6oz cold water over the ice and stir to combine with the syrup.
- Pour the pumpkin cream cold foam over the back of a spoon on top so it sits as a visible layer instead of sinking in.
- Finish with a pinch of pumpkin pie spice. Serve immediately with a straw.
Assumptions: grande-size drink, national-average 2026 pricing for chains’ newly-launched pumpkin-cream-matcha fall item (comparable to other pumpkin-cream drinks on the same menus), culinary-grade matcha and sugar at this site’s standard syrup pricing, real canned pumpkin puree and heavy cream at typical grocery pricing. This runs pricier than most of this site’s drinks for an honest reason: real matcha and a rich cream foam are both genuinely costlier ingredients than a sugar syrup, and we’re not understating that to make the recipe look cheaper than it is.
Swaps & Notes
- No milk frother? A tightly sealed jar shaken hard for 30-45 seconds gets you most of the way to a foamy texture.
- Want it lighter? Swap the heavy cream for half-and-half in the foam — it whips up thinner, but still foams.
- Watching sugar? Swap in the Sugar-Free Matcha Syrup and a sugar-free brown sugar substitute in the foam.
- This is written iced on purpose. Floated cold foam doesn’t translate to a hot build the way steamed milk does, so there’s no hot version here.

FAQ
Is this the same as a Pumpkin Spice Latte with matcha swapped in?
No — a PSL is syrup stirred into espresso with steamed milk poured over. This is matcha syrup and water over ice, topped with a separately whipped pumpkin cream foam that floats rather than mixing through. See our Iced Pumpkin Cream Shaken Espresso for the same foam built over espresso instead.
Why is the calorie count higher than your regular Matcha Latte?
The pumpkin cream cold foam is genuinely rich — 1/3 cup of heavy cream alone runs close to 270 calories. That’s how rich this style of drink is at cafés and at home alike.
Does the foam stay floated, or does it mix in?
It sits on top for the first few minutes, same presentation as the chain version, then gradually mixes in as you drink or stir.
