    Dubai Chocolate Pistachio Syrup

    The BYOB Team15 min1 batch (about 12 servings, 2 tbsp each)~$0.11/serving (~$1.29 per batch, makes ~12 servings)67 cal/serving

    Ingredients & steps

    Standard

    Ingredients

    • 1 cup water
    • 1 cup granulated sugar
    • 2 tbsp unsweetened cocoa powder
    • 1 tsp real pistachio extract
    • Pinch of fine sea salt

    Steps

    1. 1.Whisk the water, sugar, and cocoa powder together in a small saucepan BEFORE turning on the heat -- cocoa clumps badly if it hits hot liquid without being fully whisked in cold first.
    2. 2.Set over medium heat and bring to a gentle simmer, whisking constantly so the cocoa doesn't scorch on the bottom of the pan.
    3. 3.Simmer 3-4 minutes, whisking occasionally, until smooth.
    4. 4.Remove from heat and stir in the pistachio extract and salt. Let cool completely.
    5. 5.Store in a sealed jar in the fridge for up to 2 weeks. Use 2 tbsp per drink. Keep any crushed kataifi (see the Dubai Chocolate Pistachio Latte) completely separate -- it does not go in this jar.

Calorie figures on this page are estimates based on typical ingredient values, not a lab analysis of your exact batch — they'll shift with the brand of milk, syrup, or protein powder you actually use. "Ingredient-Honest" and "sugar-free" describe what's in the recipe, not a health claim. Dubai chocolate — the viral pistachio-cream-and-crunchy-kataifi chocolate bar — is the flavor trend of the moment, and the chocolate-and-pistachio half of it translates cleanly into a coffee syrup. The crunchy shredded-phyllo (kataifi) part does not, and this recipe is upfront about that split: this jar is cocoa and pistachio only, built the same way our Mocha Sauce and Pistachio Syrup are. The kataifi crunch lives entirely in the Dubai Chocolate Pistachio Latte recipe instead, added fresh on top at serving time — put it in a liquid syrup jar and it would be a soggy, flavorless mess within minutes.

    The Syrup

Whisk the cocoa powder into the water and sugar before turning on the heat — cocoa clumps almost instantly if it hits hot liquid unmixed. Bring the whole mixture to a gentle simmer over medium heat, whisking often, and cook 3-4 minutes until smooth. Off the heat, stir in the pistachio extract and a pinch of salt, then let cool completely.

Store the finished syrup in a sealed jar in the fridge for up to 2 weeks. It makes roughly 12 drinks’ worth at 2 tbsp per serving.

Batch Cost vs. Store-Bought Flavored Syrup
    This batch (12 servings)$1.29 total
    Per 2 tbsp serving~$0.11
    A specialty/viral-flavor bottled syrup, per serving$0.50-$0.65

Assumptions: unsweetened cocoa powder and sugar at typical grocery pricing, and real pistachio extract at small-bottle retail pricing (the pricier ingredient here, same rate our Pistachio Syrup uses). A viral, just-launched flavor like this doesn’t have an established “typical bottle price” the way vanilla or caramel does yet, so the store-bought comparison above is a reasonable estimate based on other specialty/limited-run syrups, not a citation of one specific product.

    Storage & Shelf Life

    • Keeps about 2 weeks in a sealed jar in the fridge.
    • Give it a stir before using — cocoa-based syrups can separate slightly; that’s normal.
    • Double the batch if you go through it quickly — everything scales evenly.

    Swaps & Notes

    • Want it richer? Swap 1 tbsp of the sugar for the same amount of melted dark chocolate, stirred in at the end off the heat, for a more ganache-like body.
    • No pistachio extract? Almond extract is the closest common substitute in flavor family, though it reads as a genuinely different (almond, not pistachio) flavor, not a stand-in that tastes the same.
    • Remember: no kataifi in this jar. See the Dubai Chocolate Pistachio Latte for where and how the crunch actually goes.

    What to Make With This

2 tbsp of this syrup, stirred into hot espresso before adding steamed milk and finished with a crunchy toasted-kataifi topping, is the Dubai Chocolate Pistachio Latte.

    FAQ

Does this syrup have kataifi (shredded phyllo) in it?

No, and it’s not supposed to. Kataifi is a dry, crisp pastry — any contact with a liquid syrup turns it soggy within minutes, so it’s added separately, fresh, on top of the finished drink instead of cooked into this jar.

Is this real pistachio, or just artificial flavoring?

Real pistachio extract, the same ingredient our Pistachio Syrup uses — not whole pistachios (which would be far more expensive and harder to get a consistent flavor from batch to batch) but a genuine pistachio-derived extract, not a synthetic “green flavor.”

Can I use this syrup for anything besides the latte?

Yes — it works in a frappé-style blended build or drizzled over ice cream the same way our Mocha Sauce does, though we haven’t published a dedicated frappé version of this specific flavor yet.
