    Nitro White Mocha Cold Brew

The BYOB Team40 min1 drink (from a batch of White Mocha Sauce that makes about 12 servings)~$1.15/drink (~$3.20 one-time for the sauce batch, makes ~12 drinks, plus ~$0.45/drink for the nitrogen charge)115 cal/serving

Uses Cold Brew Concentrate (Plain, No Protein) — make a batch ahead of time; it keeps in the fridge for a week or two, so you won't need to make it again for every drink.

    Ingredients & steps

    Standard

    Ingredients

    • 4oz Cold Brew Concentrate (homemade or store-bought)
    • 4oz cold water (brings the concentrate to drinking strength -- same 1:1 ratio the concentrate recipe itself calls for)
    • 2 tbsp White Mocha Sauce, rested at room temperature for 5-10 minutes before use (make a batch ahead of time -- keeps about 1 week in the fridge, since it has real cream in it)
    • 1 nitrogen charge (one 8g N2 charger in a whipped-cream-style dispenser fitted with a nitro flow-restrictor widget, or the reservoir of a dedicated nitro cold brew maker -- see the equipment note below)
    • Ice, if you want it colder after pouring (optional -- add after, not before, or it disrupts the cascade)

    Steps

    1. 1.Make a batch of White Mocha Sauce ahead of time if you haven't already -- it's a once-every-week-or-two step, not a per-drink one.
    2. 2.Pull the 2 tbsp of sauce you need out of the fridge and let it sit at room temperature for 5-10 minutes before combining -- real white chocolate can firm back up when cold, and small solidified flecks are more likely to catch in a nitro flow-restrictor widget than a fully liquid sauce.
    3. 3.Combine 4oz cold brew concentrate, 4oz cold water, and the sauce in your whipped-cream-style dispenser or the reservoir of your dedicated nitro cold brew maker. Stir or shake until fully smooth.
    4. 4.Charge with one 8g N2 charger per your device's instructions, then shake or invert exactly as its manual says.
    5. 5.Chill in the fridge for at least 30 minutes -- colder liquid holds the nitrogen better and cascades more visibly.
    6. 6.Dispense slowly into a chilled glass, holding the nozzle close to the glass. This is the mellowest, softest cascade of any flavor on this site -- the real cream in the sauce is why.
    7. 7.Add ice after pouring if you want it colder, not before, and serve immediately.

White Mocha is the richest, sweetest build in this site’s whole nitro lineup, and the only one that needs a step none of the others do: letting the sauce come up off the fridge before it goes anywhere near your dispenser. White Mocha Sauce is real white chocolate melted into heavy cream, and cocoa butter firms back up at fridge temperature the same way any chocolate does. Charge it cold and you risk small solidified flecks working their way into a nitro flow-restrictor widget instead of a fully liquid sauce passing through clean. Five to ten minutes on the counter solves it completely.

Why the Cascade Looks Different Here

Nitrogen infusion works best in low-fat liquid, which is exactly what this sauce isn’t. Real heavy cream and melted white chocolate soften nitro’s usual sharp, tight cascade noticeably — if you’ve made a leaner flavor from this site first, like Vanilla or Salted Caramel, expect this one to look and pour visibly different. It’s still a real cascade, just a mellower, creamier one, closer to how a Guinness pour looks gentler than a nitro cream soda’s.

The Equipment Behind Every Nitro Build Here

Two setups get you an actual cascade, white mocha or otherwise. A whipped-cream-style dispenser — an iSi Gourmet Whip is the usual example — fitted with a nitro-specific flow-restrictor widget in place of the stock whipped-cream head, or a dedicated nitro cold brew maker that bundles the charger and restrictor into one countertop device. Either route needs standard 8g N2 chargers, typically sold in nitro-labeled packs. The per-drink price below covers only the sauce, concentrate, and charger — not the dispenser or maker itself, which is a separate purchase if you don’t already own one.

Make the White Mocha Sauce First

This recipe assumes a jar of White Mocha Sauce is already in your fridge — a quick stovetop batch, about 12 drinks’ worth, keeping about a week because of the real cream.

    Building the Nitro Cold Brew

    1. Pull 2 tbsp of sauce and let it sit at room temperature for 5-10 minutes — this is the one prep step unique to this flavor.
    2. Combine it with 4oz Cold Brew Concentrate and 4oz cold water in your dispenser or nitro maker’s reservoir, stirring until fully smooth.
    3. Charge with one 8g N2 charger per your device’s instructions, then shake or invert as directed.
    4. Chill at least 30 minutes for a colder charge and a more visible (if softer) cascade.
    5. Pour slowly into a chilled glass, nozzle close to the surface.
    6. Add ice after pouring, not before, and serve immediately.
Specialty Café Nitro vs. Home Nitro White Mocha Cold Brew
Specialty/boutique café nitro white mocha cold brew~$6.50
Home nitro white mocha cold brew (concentrate, sauce, nitrogen charge)~$1.15
    Savings per drink$5.35

The sauce batch runs about $3.20 one time for roughly 12 drinks — the priciest syrup base on this list, since real white chocolate and heavy cream cost more than a cane sugar syrup. The nitrogen charge adds about $0.45/drink separately (an 8g charger runs about $0.90, sold in nitro-labeled 10-packs around $9, lasting roughly two pours per charge in a 1-pint reservoir). Pricing assumes grocery-bean concentrate and standard white chocolate/heavy cream cost. A flavored-nitro lineup like this isn’t a fixed national-chain item yet, so $6.50 is representative specialty-café pricing. At five a week over the site’s standard 48-week year (240 drinks), that’s roughly $1,284/year saved versus the café version.

    Swaps & Notes

    • Want a lighter, less rich version? Cut to 1 tbsp of sauce instead of 2, or try Nitro Vanilla instead — it’s dairy-free, noticeably lighter, and pours with a sharper cascade.
    • No dispenser or nitro maker yet? A regular iced white mocha cold brew is still a genuinely good drink, just without the cascade.
    • Sauce still has firm bits after resting on the counter? Give it a quick warm-water bath (jar in a bowl of warm water for a minute or two) rather than the microwave — direct heat can split the cream.

    FAQ

Why does the sauce need to warm up before I use it, when your other syrups go straight from the fridge?

Because it’s the only sauce on this site’s nitro lineup with real melted white chocolate in it. Cocoa butter firms back up in the fridge the way any chocolate does, and cold, semi-solid flecks are more likely to catch in a nitro flow-restrictor widget than a fully liquid sauce is. Five to ten minutes at room temperature fixes it — none of our sugar-only syrups need this step.

Does the cream in this sauce affect the cascade?

Yes, more than in any other flavor here. Nitrogen works best in low-fat liquid, and this sauce is the richest one on the list — real heavy cream and white chocolate both soften the cascade noticeably. It still works and still tastes right, just with a mellower, creamier pour than a dairy-free flavor like Vanilla or Toasted Coconut.

Is there a lighter version of this drink?

Cutting the sauce to 1 tbsp instead of 2 lightens it without changing the process. If you want something meaningfully lighter and less rich altogether, Nitro Vanilla Cold Brew is the better starting point — same basic build, no cream, sharper cascade.
