  • 1 cup heavy cream
  • 1/2 cup pure maple syrup
  • 1/2 tsp unsweetened cocoa powder
  • 1/2 tsp vanilla extract
  • 1 1/2 tsp non-alcoholic Irish cream flavoring/baking extract
  • Pinch of fine sea salt

Steps

  1. 1.Warm the heavy cream and maple syrup together in a small saucepan over medium-low heat. Simmer gently for about 5 minutes, whisking occasionally, until slightly thickened and combined -- don't let it boil hard.
  2. 2.Whisk in the cocoa powder until fully dissolved.
  3. 3.Remove from heat and stir in the vanilla extract, Irish cream flavoring, and salt.
  4. 4.Let cool completely. Store in a sealed jar in the fridge for up to about 1 week (fresh cream and maple, no condensed-milk-style sugar concentration to help preserve it -- shorter than the Standard syrup's 2 weeks). Use 2 tbsp per drink, stirred into hot espresso before adding milk.

This is the syrup behind our Clean-Ingredient Irish Cream Latte – real heavy cream and real maple syrup standing in for the Standard tier’s sweetened condensed milk, which typically carries corn syrup and stabilizers on top of the milk and sugar.

What “Clean-Ingredient” Means Here

Real cream and real maple syrup, simmered gently with a little cocoa for warmth and finished with vanilla and Irish cream flavoring. No condensed-milk stabilizers, no corn syrup. It’s a genuine upgrade in ingredient sourcing, similar in spirit to how our Cocoa-Maple Sauce swaps refined sugar for maple in the Mocha family.

A Note on Why the Price Jump Is Smaller Here Than Elsewhere

In most of our flavor families, the Clean-Ingredient tier costs noticeably more than Standard, because it swaps cheap granulated sugar for pricier real maple syrup. Irish Cream is a little different: the Standard tier’s base ingredient, sweetened condensed milk, is already a relatively rich, concentrated dairy product – not a cheap sugar-water syrup – so the gap between it and a real-cream-and-maple version is smaller. It’s also worth knowing that maple syrup isn’t nearly as sweetness-concentrated as condensed milk’s blend of added sugar and milk sugars, so this recipe needs a genuinely larger amount of maple (1/2 cup, versus the 1/4 cup you might expect) to land in the same sweetness range – which itself pushes the cost back up closer to the Standard tier. Both syrups end up costing about the same per serving; the real difference between them is ingredient sourcing, not price.

The Syrup

Warm the cream and maple syrup together over medium-low heat and simmer gently for about 5 minutes, whisking occasionally, until it thickens slightly and comes together – don’t let it boil hard. Whisk in the cocoa powder until dissolved, then remove from heat and stir in the vanilla extract, Irish cream flavoring, and a pinch of salt. Let it cool completely.

  • Condensed coconut milk is a reasonable dairy-free alternative if you want a similar thick, sweet base without dairy – swap it in for the heavy cream at a similar ratio, though we haven’t tested exact costs/calories for that version.

FAQ

Why does this need so much more maple syrup than I’d expect?

Maple syrup isn’t as sweetness-concentrated as sweetened condensed milk, which combines added sugar with the milk’s own natural sugars. Matching condensed milk’s sweetness takes a genuinely larger volume of maple – about double what you might guess.

Is this much more expensive than the Standard syrup?

Not dramatically – unlike our other Clean-Ingredient tiers, which usually cost noticeably more than Standard, this one lands close in price. See the note above for why.

Do I need to make this every time I want a latte?
