- 1 cup (about 6oz) white chocolate chips or chopped white chocolate baking bar
- 1/2 cup heavy cream
- 1/4 cup whole milk
- 1/3 cup dried cranberries, roughly chopped
- Zest of 1 orange, peeled off in wide strips with a vegetable peeler (avoid the white pith -- it's bitter)
- Pinch of fine sea salt
- 1/2 tsp vanilla extract
Steps
- 1.Warm the heavy cream, whole milk, dried cranberries, and orange zest strips together in a small saucepan over medium-low heat until steaming, not boiling.
- 2.Remove from heat, cover, and let steep for 10 minutes off the heat -- this softens the dried cranberries and pulls the orange oil out of the zest at the same time.
- 3.Strain out and discard the orange zest strips, but keep the softened cranberries in the cream. Mash the cranberries against the side of the pan with a fork (or pulse briefly with an immersion blender) to break them into small flecks.
- 4.Return the pan to low heat just until warm again, then add the white chocolate. Let it sit undisturbed for 1-2 minutes to start softening, then whisk until fully melted and smooth, with small cranberry flecks throughout.
- 5.Stir in the salt and vanilla extract. Let cool completely -- it thickens noticeably as it cools.
- 6.Store in a sealed jar in the fridge for up to about 1 week (this is a fresh-cream sauce with real fruit in it, not a sugar syrup -- it doesn't keep as long as our other syrups/sauces do). Give it a stir before using. Use 2 tbsp per drink, stirred into hot espresso before adding milk.

This is the sauce behind our Cranberry Bliss Latte – our own latte version of the tart cranberry, bright orange, and white chocolate combo that shows up on holiday dessert counters every November. To be clear up front: this is a flavor-inspired recipe, not a copy of any specific bakery item or café product. It builds on the same real-white-chocolate technique as our White Mocha Sauce, with dried cranberries and fresh orange zest steeped into the cream before the chocolate goes in.
Why This One Steeps Before It Melts
Our White Mocha Sauce is just cream, milk, and white chocolate – no steeping step needed. This version borrows the steep-and-strain technique from our Orange Cardamom Syrup instead: the dried cranberries need a few minutes in warm cream to soften and plump back up, and the orange zest needs that same time to release its oil, so both go into the pan together before the white chocolate ever gets added. The zest strips get strained out (like any citrus-zest syrup on this site), but the softened cranberries stay in and get mashed into small flecks – real fruit texture running through the sauce, not just cranberry flavoring.
The Sauce
Warm the cream, milk, dried cranberries, and orange zest together over medium-low heat just until steaming – don’t let it boil. Off the heat, cover the pan and let it steep for 10 minutes so the cranberries soften and the orange oil infuses. Strain out the zest strips, then mash the softened cranberries right in the cream with a fork until they break into small flecks.
Warm the cream back up slightly, add the white chocolate, and let it sit a minute or two before whisking it smooth and glossy. Stir in a pinch of salt and 1/2 tsp vanilla extract, then let it cool completely.
Store the finished sauce in a sealed jar in the fridge for about a week. It makes roughly 12 drinks’ worth at 2 tbsp per serving.
Assumptions: commercial white chocolate baking chips at typical grocery pricing (roughly $0.40/oz), heavy cream and whole milk at typical grocery pricing, a standard 12oz bag of sweetened dried cranberries, and one orange for zest. This runs a little pricier per serving than our plain White Mocha Sauce – real dried cranberries and fresh citrus cost more than white chocolate and cream alone – but it’s still well below what a bottled holiday-specialty syrup costs per pump.
Storage & Shelf Life
- Keeps about 1 week in a sealed jar in the fridge – same shorter window as our other fresh-dairy sauces, since real fruit doesn’t extend shelf life the way sugar syrup does.
- It firms up in the fridge. A short stir or a few seconds in a warm water bath (jar and all) brings it back to pourable.
- Double the batch at the start of the season if you go through cranberry bliss lattes quickly, but plan to use each batch within the week either way.
