Ingredients

  • 1 cup (about 6oz) sugar-free white chocolate chips (sweetened with erythritol, monk fruit, or allulose -- check the baking or keto/low-sugar section, or order online)
  • 1/2 cup heavy cream
  • 1/4 cup whole milk
  • 1/3 cup unsweetened dried cranberries, roughly chopped (no added sugar -- check the natural/no-sugar-added dried fruit section; these are genuinely tart)
  • Zest of 1 orange, peeled off in wide strips with a vegetable peeler (avoid the white pith -- it's bitter)
  • Pinch of fine sea salt
  • 2 tbsp granulated monk fruit or allulose sweetener (to balance the unsweetened cranberries' tartness)
  • 1/2 tsp vanilla extract

Steps

  1. 1.Warm the heavy cream, whole milk, unsweetened dried cranberries, and orange zest strips together in a small saucepan over medium-low heat until steaming, not boiling.
  2. 2.Remove from heat, cover, and let steep for 10 minutes off the heat -- this softens the cranberries and pulls the orange oil out of the zest.
  3. 3.Strain out and discard the orange zest strips, but keep the softened cranberries in the cream. Mash the cranberries against the side of the pan with a fork to break them into small flecks -- unsweetened dried cranberries are noticeably more tart than the regular kind, which is expected.
  4. 4.Return the pan to low heat just until warm again, then add the sugar-free white chocolate. Let it sit 1-2 minutes to soften, then whisk patiently until smooth -- sugar-free white chocolate can seize or turn slightly grainy more easily than the regular kind, since sugar alcohols don't melt as smoothly. If it seizes, whisk in an extra splash of warm cream to bring it back.
  5. 5.Whisk in the monk fruit or allulose sweetener, salt, and vanilla extract until fully combined. Taste and add up to another tablespoon of sweetener if the cranberry tartness is too sharp for you. Let cool completely.

Why This One’s Genuinely Harder Than Swapping a Sweetener

Two separate ingredients in this sauce carry real sugar in their regular form, not just one. White chocolate needs real sugar to set correctly (the same reason our Sugar-Free White Mocha Sauce uses real sugar-free white chocolate chips rather than melting regular chocolate with a liquid sweetener stirred in), and most dried cranberries on shelf are heavily sweetened with added sugar during processing – cranberries are naturally very tart, so producers add sugar to make them palatable as a snack. This recipe swaps in two genuine, if more niche, sugar-free products: real sugar-free white chocolate chips (specialty/keto chocolate brands make these) and unsweetened dried cranberries (no added sugar, found in the natural-foods or no-sugar-added dried fruit section). Both are real products, not improvised workarounds, but they’re less common on shelf than their regular counterparts, so you may need to check a specialty section or order online.

The Sauce

Warm the cream, milk, unsweetened dried cranberries, and orange zest together over medium-low heat just until steaming. Off the heat, cover and let steep for 10 minutes. Strain out the zest strips, then mash the softened cranberries into small flecks right in the cream – expect them to taste sharply tart on their own, since there’s no added sugar cutting that edge yet.

An Honest Note on “Sugar-Free” Here

Cutting the sugar doesn’t cut the calories nearly as much as it does in our sugar-free flavored syrups (vanilla, caramel), which are almost entirely sugar and water to begin with. This sauce is still built on real cream and real cocoa-butter fat from the white chocolate, and both carry calories whether or not sugar is in the mix – the unsweetened cranberries help more with sugar grams than with total calories. So this version is meaningfully lower in sugar than the Standard sauce, but it’s not a low-calorie sauce – it’s a lower-sugar one, same honest framing as our Sugar-Free White Mocha Sauce.

Swaps & Notes

Can I use regular dried cranberries with a sugar substitute stirred in instead?

Not really, for the same reason regular white chocolate can’t just take a sweetener swap – regular dried cranberries already have sugar baked into their processing, so you can’t “remove” it after the fact. Real unsweetened dried cranberries (dried without added sugar) are the more reliable route.

Where do I find unsweetened dried cranberries?

Check the natural-foods aisle’s no-sugar-added dried fruit section, or a specialty grocer – they’re less common than the sweetened kind but several brands make them. Online ordering is a reliable fallback.

What to Make With This
