  • 3 tbsp unsalted butter
  • 1/3 cup raw pecans, roughly chopped
  • 3/4 cup pure maple syrup
  • 1/4 tsp fine sea salt

Steps

  1. 1.Melt the butter in a small saucepan over medium heat, then keep cooking, swirling the pan often, for 3-5 minutes until it turns golden-brown and smells toasty and nutty (real browned butter, sometimes called beurre noisette) -- watch closely near the end, it goes from browned to burnt fast.
  2. 2.Add the chopped pecans directly to the browned butter and stir to toast them in the hot butter for 1-2 minutes, until fragrant -- this transfers noticeably more flavor than steeping raw nuts in room-temperature or barely-warm syrup would.
  3. 3.Remove from heat and stir in the maple syrup. Return to low heat just until warm (not simmering), then take it off the heat, cover, and let steep for 15 minutes.
  4. 4.Strain the syrup through a fine-mesh sieve to remove the pecan pieces (save the strained pecans -- they're great stirred into oatmeal or yogurt, or scattered on top of the finished latte, nothing here goes to waste).
  5. 5.Stir in the salt. Let cool completely.
  6. 6.Store in a sealed jar in the fridge for up to 1 week (shorter than the site's other maple-based syrups, since this one has real butter in it). Give it a shake before using. Use 2 tbsp per drink, stirred into hot espresso before adding milk.

This is the syrup behind our Clean-Ingredient Maple Pecan Latte — real pecans, toasted directly in real browned butter, then steeped into real maple syrup. It combines the two techniques our other Clean-Ingredient syrups use separately: the real-browned-butter method from our Brown Butter Toffee Syrup, and the toast-and-steep method from our Toasted Hazelnut-Maple Syrup.

The One Clean-Ingredient Syrup on This Site That Skips the Extract

We’re upfront on our Hazelnut and Toffee Nut Clean-Ingredient recipes that steeping alone is often too subtle to read clearly in a finished latte, so both of those still call for a little bottled extract to carry the flavor the rest of the way. This one doesn’t need it, and it’s worth explaining why: toasting the pecans directly in hot browned butter — rather than steeping raw nuts in maple syrup that’s only lukewarm — transfers meaningfully more flavor into the fat before the maple syrup even goes into the pan. Combine that with browned butter’s own naturally strong, nutty, caramelized flavor (which is doing real work on its own, not just carrying the pecan), and the result reads clearly as “maple pecan” without an extract backing it up. If it tastes too subtle for your taste once you try it, 1/4-1/2 tsp of pecan or butter extract stirred in at the end will reinforce it — we just didn’t find it necessary in testing this method.

The Syrup

Take the pan off the heat and stir in 3/4 cup maple syrup, then return it to low heat just until warm (don’t let it simmer), cover, and let it steep for 15 minutes. Strain out the pecan pieces through a fine-mesh sieve (they’re good on oatmeal afterward, or scattered on top of the finished latte, not wasted), then stir in 1/4 tsp salt. Let it cool completely.

Notably, this version uses less maple syrup per batch (3/4 cup) than our Standard syrup does (1 full cup), so even with butter and pecans added on top, it lands a little cheaper per serving than the Standard tier — an unusual flip from how Clean-Ingredient tiers work everywhere else on this site.

Storage & Shelf Life

  • Keeps about 1 week in a sealed jar in the fridge — shorter than the site’s other maple-based syrups (which typically keep 2 weeks), because this one contains real butter/dairy rather than being a plain maple syrup.
  • Give it a shake before every use, not just the first — the butter can separate slightly as it sits.
  • Double the batch if you go through maple pecan lattes quickly, but consider making it more often instead given the shorter shelf life.

Swaps & Notes

  • Watching the browning closely is the most important step. Go by smell and color, not a timer — the moment it smells toasty and turns the color of a paper grocery bag, pull it off the heat before adding the pecans.
  • No fine-mesh sieve? A clean coffee filter or cheesecloth over a jar works just as well, just slower.

Why doesn’t this recipe use a butter pecan extract, when your other Clean-Ingredient syrups still use some extract?

Because toasting real pecans directly in hot browned butter transfers more flavor than steeping raw nuts in warm maple syrup alone (the method our Hazelnut-Maple Syrup uses), and browned butter itself carries a strong, distinct flavor on its own. Together they read clearly as “maple pecan” without a bottle backing them up — though you’re welcome to add a little extract if you want it more pronounced.

Is this actually lower in sugar or calories than the Standard syrup?

Why does this cost less than the Standard syrup, when Clean-Ingredient is usually the most expensive tier on this site?

Because this recipe uses 3/4 cup maple syrup instead of the Standard version’s full cup — the flavor gets “extended” by the toasted pecans and browned butter instead of relying on straight maple syrup alone. Real maple syrup is the single biggest cost driver in this family, so using less of it, even while adding butter and pecans, ends up a little cheaper overall.
