Same drink, three ways. Clean-Ingredient is our top recommendation -- Standard and Sugar-Free are the other options.

Uses Blonde Vanilla-Maple Syrup (Clean-Ingredient) — make a batch ahead of time; it keeps in the fridge for a week or two, so you won't need to make it again for every drink.

Ingredients & steps

Clean-Ingredient

Written hot. Switch to see the iced version's ingredients and steps.

Ingredients

  • 2oz light-roast ('blonde') espresso (or 1/3 cup strong light-roast drip coffee/moka pot equivalent -- see the Blonde Vanilla Latte for why the roast matters)
  • 8oz whole milk (or full-fat oat milk), steamed or frothed
  • 2 tbsp Blonde Vanilla-Maple Syrup (make a batch ahead of time -- it keeps about 2 weeks in the fridge)
  • Optional: whipped cream for topping

Steps

  1. 1.Make a batch of Blonde Vanilla-Maple Syrup ahead of time if you haven't already -- it's a 5-minute, no-cook batch that keeps about 2 weeks in the fridge.
  2. 2.Pull a double shot of light-roast espresso directly into your serving cup (or brew strong light-roast coffee). Go slightly finer on the grind if your shot runs thin or sour -- light roast beans are denser than medium/dark.
  3. 3.Stir in 2 tbsp of the blonde vanilla-maple syrup while the espresso is hot until fully combined.
  4. 4.Steam or froth 8oz of whole milk or full-fat oat milk to about 150°F and pour over the espresso mixture.
  5. 5.Top with whipped cream if using. Serve immediately.

Not medical or nutrition advice. Calorie figures on this page are estimates based on typical ingredient values, not a lab analysis of your exact batch — they'll shift with the brand of milk, syrup, or protein powder you actually use. "Clean-ingredient" and "sugar-free" describe what's in the recipe, not a health claim. If you're managing diabetes, a caffeine sensitivity, pregnancy, or another condition, check with a doctor or dietitian before making a recipe part of your routine. Read the full disclaimer.

Our Standard and Sugar-Free Blonde syrups already upgraded from extract to real vanilla bean paste for a cleaner flavor against the light roast. This tier goes further on both fronts: real maple syrup instead of a cane-sugar or sweetener-blend syrup, and a real scraped vanilla bean instead of paste. Once the syrup’s made, assembly still takes about 2 minutes.

Why Light Roast Still Comes First

Being upfront about ranking: the light-roast espresso is still the headline of this family, not the syrup upgrade. Everything that makes vanilla pair well here – brighter acidity, less bitterness, more of the bean’s own flavor surviving the roast – comes from the beans, not the sweetener. If you’re new to this family, read why “blonde” isn’t just vanilla again on the Standard recipe first. What this tier changes is what’s in the syrup jar, on top of that roast choice.

What “Clean-Ingredient” Means Here

Maple syrup and a real vanilla bean – nothing you’d need a label to identify, and no syrup-thickener base at all. It’s not a “diet” version like our Sugar-Free tier: it’s a rebuilt-from-real-food version, and we’re upfront below about where it doesn’t win. Calories and total sugar land higher than the Standard version here, not lower – maple syrup isn’t meaningfully lower in either, and this batch uses more syrup per serving than the paste-based versions. The upgrade is ingredient sourcing, not a nutrition hack.

Building the Latte

  1. Pull a double shot of light-roast espresso (about 2oz) into your cup, or brew strong light-roast coffee. Go slightly finer on the grind if your first shot or two runs thin or sour.
  2. Stir in 2 tbsp of the blonde vanilla-maple syrup while the espresso is hot.
  3. Steam or froth 8oz of whole milk (or full-fat oat milk) to about 150°F and pour over the espresso mixture.
  4. Top with whipped cream if you want the full café look.
Café Blonde Vanilla Latte vs. This Version, Honestly Compared
Café grande blonde vanilla latte (light-roast espresso swap is typically a $0.50-0.80 upcharge)$6.45
Home Clean-Ingredient Blonde Vanilla Latte~$2.85
Savings per drink$3.60

The syrup itself is a one-time ~$12.20 (real maple syrup and whole vanilla bean pods are the entire cost) and makes about 6 drinks – see the full syrup recipe for the cost breakdown, which comes out to roughly $2.03 per drink in syrup alone.

Assumptions: grande-size drink, national-average café pricing plus the typical upcharge cafés add for a light-roast/“blonde” espresso swap, whole milk, real maple syrup at typical grocery pricing ($8-9 for a 12oz bottle), whole vanilla bean pods at typical grocery pricing ($4/pod).

Why This Costs More Than the Other Two Tiers (and Why That’s Fine)

Being straight about the math: this version saves meaningfully less per drink than the Standard or Sugar-Free syrup versions, because real vanilla bean pods cost more than paste, and real maple costs more than sugar or a sweetener blend. It’s also not lower in calories or total sugar than the Standard version – maple runs about the same per tablespoon as cane sugar, and this batch’s smaller yield means more syrup cost lands on each drink. What you’re paying the premium for is ingredient sourcing: no paste, no extract, no refined sugar, nothing you couldn’t name out loud. This is the tier we recommend by default – pick it because you want that, not because it’s the cheapest or lowest-calorie option. It isn’t; the Standard version is cheaper and the Sugar-Free version is lower-calorie. Even so, it’s still a real saving against the café version – just the smallest of the three.

FAQ

Do I need to make the syrup every time I want this drink?

No – that’s why it’s its own recipe now. One batch keeps about 2 weeks in the fridge and covers roughly 6 drinks, so this page is just the quick assembly step.

Does this still need light-roast beans?

Yes – the roast is the actual point of this family, not the syrup. Made with a medium or dark roast, this becomes a whole-ingredient version of our regular Clean-Ingredient Vanilla Latte instead.

Why is this version more expensive than the other two Blonde tiers?

Real vanilla bean pods and real maple syrup simply cost more per serving than paste-and-sugar or paste-and-sweetener do, and this batch yields fewer servings per jar. It’s still a real saving over a café blonde vanilla latte – just the smallest saving of the three tiers, and we’d rather tell you that upfront than round up the number.
