Steps

  1. 1.Combine the water and monk fruit or allulose sweetener in a small saucepan over medium heat, stirring until fully dissolved -- sugar-free sweeteners can take a bit longer than sugar to dissolve smoothly.
  2. 2.Whisk in the ground cinnamon and bring to a gentle simmer for 2-3 minutes, whisking occasionally so it doesn't clump at the bottom.
  3. 3.Remove from heat and stir in the vanilla extract. Let cool completely.
  4. 4.Store in a sealed jar in the fridge for up to 2 weeks. Give it a shake before using. Use 2 tbsp per drink, stirred into hot espresso before adding milk.

This is the syrup batch behind our Sugar-Free Cinnamon Dolce Latte — the same method as our Standard syrup, with a monk fruit or allulose sweetener standing in for cane sugar. Ground cinnamon and real vanilla extract carry the flavor either way.

The Syrup

Combine 1 cup water and 1 cup granulated monk fruit or allulose sweetener in a small saucepan over medium heat, stirring until it fully dissolves — sugar-free sweeteners can take a little longer than plain sugar, so don’t rush this step. Whisk in 2 tsp ground cinnamon and bring to a gentle simmer for 2-3 minutes, whisking now and then. Off the heat, stir in 1/2 tsp vanilla extract and let it cool completely.

Store the finished syrup in a sealed jar in the fridge for up to 2 weeks. It makes roughly 12 drinks’ worth at 2 tbsp per serving.

Sweetener Notes

  • Monk fruit or allulose blends measure roughly cup-for-cup like sugar and behave most like it here — the easiest substitution if this is your first sugar-free syrup.
  • Stevia works but is far more concentrated — use a fraction of the amount and adjust to taste, since stevia can read as slightly bitter at higher concentrations.

Does monk fruit or allulose change the taste?

Slightly — both are close to neutral-sweet with a very mild aftertaste some people notice more than others. The cinnamon and vanilla still carry most of the flavor.

Can I use cinnamon sticks instead of ground cinnamon here?

You can, but it’s not necessary for this tier the way it is for the Clean-Ingredient version – monk fruit/allulose syrup is thin like the Standard syrup’s sugar water, so ground cinnamon dissolves and disperses just fine without the extra simmering time whole sticks need.
