Most pistachio lattes, ours included, lean on a bottled extract to carry the flavor. This tier does something closer to whole-food: real pistachios, toasted and steeped into real maple syrup, with just enough real extract to make sure the drink actually tastes like pistachio once it’s diluted into espresso and milk.

What “Clean-Ingredient” Means Here (and What It Doesn’t)

This tier’s syrup uses real toasted pistachios and real maple syrup in place of dissolved cane sugar and extract alone. What it doesn’t do is eliminate the extract entirely — as we explain in the full syrup recipe, steeping alone is genuinely too subtle to read as “pistachio” in a finished latte, so 1 tsp of real extract still does real flavor work here. We’d rather tell you that than let the ingredient list imply more than it delivers.

Why This Costs More Than the Other Two Tiers (and Why It Still Uses Extract)

Being straight about the math: this version saves about $0.64 less per drink than the Standard syrup version and the same amount less than the Sugar-Free version, because real maple syrup and pistachios cost more than sugar or a sugar-free sweetener — and pistachios specifically are one of the pricier nuts we cook with on this site. It’s also not lower in calories than the other two tiers — maple syrup and real pistachio oil both add calories the other syrups’ thinner bases don’t carry. What you’re paying the premium for is real, traceable ingredients doing genuine flavor work, with an honest acknowledgment that a little real extract is still part of the method. About the same, honestly — both recipes lean on real pistachio extract for most of the flavor. This tier adds real toasted, steeped pistachios on top of that, which contributes some genuine depth and aroma, but the extract is still doing the bulk of the work in both versions.

Why is this version more expensive than the other two?

Real maple syrup and raw shelled pistachios simply cost more per serving than sugar or a sugar-free sweetener does — and pistachios themselves are a pricier nut than most others we use on this site, since they’re hand-shelled. It’s still a large saving over a café pistachio latte — just the smallest saving of the three tiers, and we’d rather tell you that upfront than round up the number.
